2 slices of bread
2 eggs
2 - 3 tbsp white butter
Salt and pepper to taste
Grilled tomato, onion, capsicum slices
Oregano flakes
Optional: finely chopped parsley or chives for garnish
Instructions
Heat an iron skillet over medium heat and spread butter evenly across the pan using a paper napkin. Allow it to heat up.
While the skillet is heating, use a round cookie cutter, a glass, or a knife to create a hole or a square in the center of each slice of bread.
Place a generous amount of butter in the skillet and then add the bread slices. Crack an egg into the center of each slice.
